How to Make Pumpkin or Butternut Soup At Home

Soup is a good starter for any meal: science shows that taking soup before your meal and helps you regulate the amount of calories you rake in the main course. More so, it is a yummy and healthy option when you want to warm up in the cold weather or just have as a delicacy when unwinding.

Pumpkin Soup is one of the easiest and simplest type of soup to make. You do not need to put in hours when making it from off the shelf ingredients. Follow this simple guide  I use to make the tastiest yet fast and 100% healthy pumpkin soup in under 30 minutes.

What You Will Need-Ingredients

  1. 1/2 kilogram Traditional Pumpkin or 1 Piece of Butternut (Butter is more readily available)
  2. Bunch of Green Onions/Spring onions or leeks
  3. Pinch of salt to taste
  4. Pinch of Black Pepper for seasoning (optional)



Steps 

  1. Peel the hard outer cover of the pumpkin or butternut (Some people like in unpeeled) and chop into smaller pieces
  2. Wash off in clean water
  3. Wash your spring onions and chop finely.
  4. Place both ingredients in a sauce pan with about 1.5 litres of water bring to a boil and cook while covered until tender on medium to high heat . It will take about 25 minutes for it to thoroughly cook.
  5. Add just enough salt to taste.

Additional Instructions 

  • Ensure you have about 1litre of water left when your butternut is well cooked
  • Remove from the fire and set aside to get off excess steam.
  • Drain off the water and set aside in a jug.
  • Place the cooked butternut into a blender and blend at medium speed for about a minute or until a very smooth consistency is attained.
  • Add the water you had drained to the thick pumpkin blend and run the blender on very low speed (This is just to mix the stuff)
Serve when hot with bread or buns.
You can add powdered pepper or other table condiments to taste and enjoy your soup
